Think breakfast, lunch, dinner, and all the snacks in between. Where some gluten-free flours can be tricky to work with in the kitchen, Brown teff flour is a bit of a star.

Teff is the smallest seed in the world – and the most nutritionally dense.

Naturally gluten-free, low GI and supercharged with all the good stuff – like iron, protein, calcium and other essential minerals, teff may be small in size, but it’s big in benefits.

It can be eaten as a seed – in everything from porridge to salads and desserts, or used as flour in baking.

What teff looks like. 

Teff seed is about the size of a poppy seed and grows in a range of colours from ivory to brown. Teff is also known as Love grass or Teff grass. While health-wise they are all the same, the different colour seeds enjoy slightly different flavours.

Ivory teff is best described as having a slightly sweet, light chestnut-like flavour, while brown teff has a richer, earthier tone, closer to a hazelnut.

TIPS

  • Brown teff flour will add a nice flavour and wholemeal colour to your baked goods at 25%, teff flour is not self-raising.
  • Teff flour absorbs more liquid than other gluten-free flours, and twice as much as wheat flour so be sure to adjust your liquid portion of the recipe accordingly!

Teff GF Bread

So appreciate the delicious flavour and nutrient density of teff flour in my simple homemade bread. Soak 3 tablespoons medium grind psyllium husks in 2.5 cups of cold water, adding and stir in 2 tsp of salt. Let stand for 15-30 mins while heating oven to 200C on fan bake. Flour your bread loaf tin so non stick.
Sift dry ingredients - 2 cups brown rice flour, 2 cups brown teff flour, 1 tsp baking soda, 2 tsp g.f. baking powder then add the water/psyllium salt, knead and form a loaf, place on tin then bake for one hour at 200 C. You may prefer adding another 1/4 - 1/2 cup of water if you like a moister loaf.
